1 stalk broccoli, chopped into bite-sized pieces
2 boiled eggs
Salad Dressing:
1/2 tbsp light soy sauce
2 tbsp greek yogurt
2 tbsp mayonnaise
1 tbsp honey
2 tbsp greek yogurt (Plain)
3 tbsp toasted sesame seeds
Optional: Sprinkle of salt and pepper to taste
Instructions
1. Prepare the broccoli
Boil broccoli in salted water for 5 minutes until tender but still bright green. Drain immediately and let cool completely.
2. Prepare the eggs
Boil eggs until just cooked.Peel, slice, and allow them to cool.
3. Make the dressing
In a clean bowl, mix all toher ingredients to make the dressing.
4. Assemble the salad
Add cooled broccoli and sliced eggs into the dressing.Gently toss until everything is evenly coated. Add salt and pepper to taste.
5. Serve
Best served immediately for the freshest taste and texture.
