Ingredients
2 chicken legs (or 2 drumsticks)
A few slices of lemon
4 red dates
A few slices of ginger
Seasoning:
1 tbsp light soy sauce
2 tsp sugar
Garnish:
Coriander (optional)
Chopped red chilli (optional)
Instructions
1. Prepare for steaming
Place an upside-down bowl in the centre of a large steaming plate.Arrange the chicken around the bowl as shown in your setup.

2. Steam the chicken
Lay ginger slices and red dates over the chicken.Steam over high heat for 25 minutes, until fully cooked.
3. Cool & shred
Remove from heat and let the chicken cool completely.Shred the meat into thin strips and set aside.

4. Make the lemon sauce
Lift the bowl in the centre (careful, it can be very hot! let it cool before removing or use gloves!) this will release the rich chicken essence collected during steaming.
Use this liquid as the sauce base.Add light soy sauce, sugar, lemon slices, and ginger. Mix well until balanced.


5. Assemble & serve
Drizzle the lemon sauce over the shredded chicken.Garnish with coriander.

Add chopped red chilli for a punch of heat and extra fragrance
