All you need!
Ingredients
1 salmon fillet
1 shiitake mushroom, sliced
1 small carrot, sliced
Rice for 1 serving
Seasoning:
1 tbsp light soy sauce (½ mixed into rice, ½ drizzled on salmon)
1 tsp mirin
1 tsp cooking sake
A sprinkle of black pepper
Instructions
1. Prepare the rice
Wash rice and place it into the rice cooker. Add water as you normally would for 1 serving.
2. Season the base
Stir ½ tbsp light soy sauce, mirin, and cooking sake into the rice and water.

3. Layer the ingredients
Arrange sliced shiitake mushrooms and carrots on top of the rice.Place the salmon fillet on top and drizzle the remaining ½ tbsp light soy sauce over it.Finish with a light sprinkle of black pepper.

4. Cook
Close the lid and cook in the rice cooker as per normal rice settings.
5. Mix & serve
Once cooked, gently break the salmon into chunks, mix everything well, and serve hot.
