Looking for a light but satisfying meal that works for lunch, dinner, or even a cozy late-night supper? This Salmon Vegetable Soup with optional noodles is one of the perfect option! Packed with tender cabbage, sweet corn, and protein-rich salmon, it’s a nourishing soup that doesn’t compromise on flavor. The miso and soy-based broth gives it a gentle umami depth, while the buttery sauté adds comfort. Best of all – you can skip the noodles for a guilt-free, low-carb option or toss in instant noodles for a heartier meal. Ready in under 30 minutes, this will easily become your go-to light comfort food.

Recipe Card: Healthy Salmon & Cabbage Soup Recipe – Guilt-Free Comfort in 20 Minutes
Servings: 1-2
1 piece of salmon (cubed)
10g butter
½ tsp sugar
¼ head of cabbage, chopped
1 cup corn (fresh, frozen, or canned)
1 Tbsp miso paste
400 ml of water (OR 500ml of water is just nice for 2 servings with noodles, but be careful not to overload the bowl with noodles like I did —my soup almost disappeared in the photos)
(Optional) 1 serving of instant noodles

Instructions:
Melt butter in a pot.
Add cabbage and corn, along with soy sauce and sugar. Cook until slightly softened.
Add salmon and cook until it just starts to turn slightly opaque.
Stir in miso paste and water until well combined.
Cover with a lid and bring to a boil.
Once boiled, uncover let it cook at medium-low heat for 3 more minutes.
Optional: Cook noodles separately and add into soup
Serve hot and enjoy!
