Easy Pressure Cooker Chicken Soup
Ingredients
1 whole chicken
1/2 napa cabbage, chopped
1 sliced onion
6 red dates
Handful of goji berries
400ml water
1 tbsp light soya sauce
Optional Add-In
1–2 carrots, chopped
Instructions
Place the sliced onions and napa cabbage at the bottom of the pressure cooker pot.
Put the whole chicken on top.
Add the red dates.
Pour in 400ml water.
Drizzle the light soya sauce over the ingredients.
Close the lid and cook using the “Soup” setting on your pressure cooker.
Once cooking is done, open the lid and add the goji berries.
Let the soup simmer for another 5 minutes before serving.
Tips
Adding carrots will make the soup naturally sweeter and richer in flavor.
You can skim off excess oil from the top if you prefer a lighter soup.
Serve the soup hot with steamed rice and light soy sauce with chili for dipping.
The napa cabbage becomes very soft and sweet after pressure cooking — perfect for cozy comfort meals.
