Ingredients:

  • 8 large strawberries (or 1 standard box)

  • 2 tbsp sugar (adjust to personal preference)

  • 1 tsp lemon juice

Instructions: Start by cleaning your strawberries thoroughly. To remove dirt and pesticide residue, soak them in a bowl of water with a teaspoon of baking soda for a few minutes, then rinse well and pat dry.

Hull the strawberries and blend them with sugar and lemon juice until smooth. Strain the mixture through a sieve for a silky texture. Store in an airtight container in the fridge.

How long does it keep?

Your purée will stay fresh in the refrigerator for up to 5–7 days. You can also freeze it in ice cube trays for longer storage. Why did i not cook it? This type of puree are good for a beverage or dizzles, if you'd like a thicker jam type of strawberry puree, you will have to cook it.

Ways to use it:

  • Stir into sparkling water, lemonade, or iced tea

  • Add to cocktails or mocktails for a fruity twist

  • Drizzle over shaved ice, panna cotta, or jelly

  • Use as a dipping sauce for sponge cake or mochi

  • Blend into smoothies or milkshakes for extra flavor

This light strawberry purée is perfect for warmer days or anytime you need a quick and natural flavor boost. Sweet, refreshing, and beautifully pink!
