Ingredients:
100g fresh strawberries, hulled and cut into 1cm pieces
1 tbsp lemon juice
170g unsalted butter, softened
100g granulated sugar
160g light brown sugar
1 tbsp vanilla extract
2 large eggs
280g plain flour (all-purpose)
1 tsp bicarbonate of soda
½ tsp fine sea salt
170g chocolate chips

Prepare strawberries
Coat cubed strawberries with lemon juice and keep them in fridge for later use

In a mixing bowl, combine butter, granulated sugar, brown sugar, and vanilla extract. Mix until light and fluffy.
Add eggs
Beat in eggs until smooth and creamy.
Add dry ingredients
Add flour, bicarbonate of soda, and salt. Mix until just combined.
Fold in chocolate chips
Add 170g of the chocolate chips and mix gently. Transfer dough to a large bowl and stir with a spatula until even. Refrigerate for 10 minutes.
Preheat oven to 170°C (340°F) no fan and line two large trays with baking paper.

Shape the cookies
Scoop 1 tablespoon of dough, roll into a ball, and place on tray spaced 5cm apart.
Add strawberries
Distribute strawberry chunks across the shaped doughs, pressing them gently into the dough.
Bake for 10–15 minutes until golden on the edges and soft in the center. (I baked for 15minutes)
