Double Chocolate Milk Bagels Recipe
Ingredients:
250g bread flour
160g ice water
3g instant yeast
15g full cream milk powder
3g salt
15g cocoa powder
3g white sugar
Chocolate chips/buttons (for filling)
Water Bath:
500ml water
25g white sugar

Instructions:
Make the Dough
In a large mixing bowl, whisk together all dry ingredients: bread flour, milk powder, cocoa powder, salt, sugar, and instant yeast.
Add Water
Gradually pour in ice water while mixing. Knead for about 5 minutes until a smooth dough forms.
First Rise
Fold the dough into an envelope shape, shape into a ball, cover, and let rise for 30 minutes.
Divide & Shape
Cut dough into 6 equal parts (~80g each). Flatten each piece, fold like an envelope, roll into a ball, and let rest for another 15 minutes.
Fill & Form Bagels
Stretch each dough ball into a rectangle. Place chocolate chips/buttons along the top edge, roll down tightly into a log, flatten one end, and wrap into a doughnut shape. Pinch to seal.
Final Proof
Let shaped bagels rest and rise for 40 minutes.
Water Bath
Bring 500ml water and 25g sugar to a gentle boil. Boil each side of the bagels for 20 seconds.
Bake
Bake at 170°C for 20 minutes until slightly puffed and firm.
Tips & Ideas:
Swap chocolate chips for peanut butter chips, hazelnuts, or even cream cheese for a different filling.
Glaze with melted chocolate or dust with icing sugar once cooled.
These bagels are best fresh, but can be frozen and reheated.
